Waterford Distillery's Woodbrook Single Farm Origin whiskey is a peated single malt that uses barley grown on the Woodbrook farm in County Dublin. This particular expression is notable as it's the last release using barley from the Woodbrook farm, as the land has since been developed into a housing estate. The whiskey is heavily peated, reaching 74ppm, making it one of the most heavily peated Irish whiskies.

Nose: Expect intense aromas of ashy peat, complemented by fruity and floral notes. You might also detect notes of lemon skins, beeswax, recently-extinguished candles, and freshly-torched crème brûlée. Some also find hints of meadow flowers, hemp, and a touch of medicine cupboard.

Palate: The palate offers a balance of peat smoke, ripe fruit, and spicy nuances. It's described as having a robust, oily texture. You might also find flavors of lemon, beeswax, crème brûlée, and shortbread. Some tasting notes mention hints of campfire ash, black tea, and apricot marmalade.

Finish: The finish is long and spicy, with lingering notes of bonfire and comforting smoke. You might also detect vanilla, citrus, and a subtle saline edge.

Overall: The Woodbrook is a complex and flavorful whiskey that highlights the impact of terroir on the final product. It is one of the most heavily peated Irish whiskies, delivering a unique experience that marries the traditional flavors of Irish whiskey with the intensity of peat smoke.
